Little Gems

I have no idea how to tell you what these are exactly but they are a little cake apparently. I have been slacking on my baking lately, I got used to baking twice a week and I’ll admit I miss baking. I need to get in to routine with my baking so I decided that I could fit a small bake in during the week and do big bakes at the weekend. Here is my first little mid week bake.

I found this recipe while flicking through my Mary Berry recipe book, its in the section for the kids but hey I wanted to be a kid forever so these are a good start. For this recipe you will need petit fours cases, I got mine from Waitrose and they were 75p for a little pot that contains 75 cases so I have enough cases to make more.

It is obvious from the picture that I cannot getting the hang of just icing sugar and lemon juice but hey ho, I gave it my best effort. You will notice I have decorated mine with fondant flowers which I made from pink fondant that I had left over from a previous recipe, sprinkles and sugar decoration which are shop brought. These can be decorated any way you want them to be.

Ingredients

Cake

  • 75 g butter
  • 2 eggs large
  • 100 g self-raising flour
  • 1 tsp baking powder
  • 75 g caster sugar
  • 1 tbsp milk

Decoration

  • 100 g icing sugar sifted
  • 1 tbsp lemon juice

Instructions

Cake

  • Pre-heat the oven to 180 degrees/ gas 4. Arrange about 65 petit fours cases on baking trays.

  • Measure all the cake ingredients into a bowl and beat well until thoroughly blended. Spoon scant teaspoonfuls of the mixture into the cases, being care not to overfill.

  • Bake in the pre-heated oven for 15-20 minutes until well risen and pale golden brown. Cool on a wire rack

Icing

  • Measure the icing sugar into a bowl and add the lemon juice until its a spreading consistency. Spoon a little in top of each cooled gem and spread out with the back of a teaspoon.

Loved making this little cakes, I’ll admit I did not make 65 as I was not sure what to do with 65 so I made about 24 which was a nice number. These would be great for a kids party given how many you can make. Perfect size if you need something sweet but do not want something big.
