Snowman Cupcakes

These cupcakes are prefect for Christmas as they would make a perfect centre piece at a Christmas party.

I cannot wait for it to snow so these cupcakes made me really want to snow especially when topped with the coconut as it gives the effect of snow.

These cupcakes were fun to make as you just start off with a cupcake then you build up your snowman on the top until you have a full snowman on the top. They are fiddly to get constructed if the buttercream hasn’t had that much time to set.

I have not added little hats to my snowmen but it can easily be done by either using something like a Rolo or a Munchie and just use a little icing to stick them to the chocolate ball or you could make a little hat out of fondant icing.

I was slightly concerned about the sour cream, it is one strange ingredient in my opinion to add to cupcakes however you cannot taste the sour cream and in fact it actually makes the cakes really light and fluffy. I will be honest and will say that even with how the cakes turned out it will not be used unless the recipe calls for it.

Snowman Cupcakes

Ingredients

Cupcakes

  • 200 g self-raising flour
  • 1 tsp baking powder
  • 175 g butter
  • 250 g caster sugar
  • 1 1/5 tsp vanilla extract
  • 3 eggs
  • 150 ml sour cream

Buttercream

  • 150 g butter
  • 1 tsp vanilla extract
  • 300 g icing sugar

Decoration

  • desiccated shredded coconut
  • white chocolate balls
  • chocolate icing pen
  • caramel icing pen
  • red strawberry laces

Instructions

Cupcakes

  • Preheat the oven to 180 degrees/ gas mark 4. Put your cases into your 12 hole muffin tin. Place the butter and sugar into the bowl and beat the mixture until light and fluffy. Add the vanilla extract and mix until combined.

  • Add the eggs one at a time until fully combined. Slowly add the dry ingredients and mix until incorporated then add the sour cream until incorporated.
  • Divide the mixture between the cases and bake in a preheated oven for 25 minutes until well risen. Transfer to a wire rack for cooling.

Buttercream

  • Put the butter into a mixer and beat until soft and fluffy. Add the vanilla extract and beat again. Sift half the icing sugar in until incorporated then add the remainder of the sugar and mix again.

Decoration

  • Put your buttercream in a piping bag and pipe onto the cakes until you have a slight doom on the top. Pour the coconut onto a small plate then dip the top of the buttercream in the coconut until fully covered.

  • Using a teaspoon, make a hole in the top of the buttercream and place one of the white chocolate balls on top of each cake. Using your icing pens, draw on your eyes, carrot and mouth. Take your strawberry lace and cut up to make a scarf then wrap it around the head of the snowman to make a scarf. Then get some chocolate sticks – i.e. Mikado’s for the arms. Now your snowman is complete

One thing I have noticed is that once it is time to decorate, I get carried away and don’t take any photos of what you should be doing. Also, be aware when eating these that coconut goes everywhere but it is so worth it.
