Ingredients

Cake

  • 75 g butter
  • 2 eggs large
  • 100 g self-raising flour
  • 1 tsp baking powder
  • 75 g caster sugar
  • 1 tbsp milk

Decoration

  • 100 g icing sugar sifted
  • 1 tbsp lemon juice

Instructions

Cake

  • Pre-heat the oven to 180 degrees/ gas 4. Arrange about 65 petit fours cases on baking trays.

  • Measure all the cake ingredients into a bowl and beat well until thoroughly blended. Spoon scant teaspoonfuls of the mixture into the cases, being care not to overfill.

  • Bake in the pre-heated oven for 15-20 minutes until well risen and pale golden brown. Cool on a wire rack

Icing

  • Measure the icing sugar into a bowl and add the lemon juice until its a spreading consistency. Spoon a little in top of each cooled gem and spread out with the back of a teaspoon.
