Pre-heat the oven to 180 degrees/ gas 4. Arrange about 65 petit fours cases on baking trays.
Measure all the cake ingredients into a bowl and beat well until thoroughly blended. Spoon scant teaspoonfuls of the mixture into the cases, being care not to overfill.
Bake in the pre-heated oven for 15-20 minutes until well risen and pale golden brown. Cool on a wire rack
