White Chocolate Chip Cookies

Anyone ever dreamt of cookies? No, just me? 

Well I have been dreaming about these bad boys for a little while now and finally made the time to take these cookies from my dreams to my tummy!

Cookies should be fully loaded with chocolate because no one wants one chocolate chip in their cookie. 

I add a mixture of chocolate chips and chopped up chocolate in my cookies to ensure they are fully packed.

Chewy in the middle, crunchy on the edges and these white chocolate chip cookies are perfect in everyway.

I always refrigerate my cookies just to help hold there shape when they are being baked in the oven but you can bake these immediately if your not patient enough to wait.

White Chocolate Chip Cookies

Ingredients

  • 120 g Unsalted Butter Room Temperature
  • 75 g Golden Caster Sugar
  • 75 g Light Brown Sugar
  • 1 Egg Large
  • 180 g Plain Flour
  • ½ tsp Bicarbonate of Soda
  • 1 tsp Vanilla Extract
  • ¼ tsp Salt
  • 100 g White Chocolate Chips
  • 100 g White Chocolate Chopped Up

Instructions

  • Line two baking sheets with parchment .Cream the butter and sugars together until very light and fluffy,
  • Then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and the salt.
  • Scoop 12 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading.
  • Once on the tray, put in the fridge for at least 10 minutes or longer if you have time*.
  • Heat the oven to 180C/160C fan/gas 4.
  • Bake for 10-12 mins or until firm at the edges but still soft in the middle – they will harden a little as they cool.
  • Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely.
