Coconut Traybake

I apologise to everyone on my mailing list as you would have been emailed on Saturday just gone saying a new recipe.

I ended up being out all-day Saturday and did not make it home in time to do my baking. I did enjoy my day out with my family.

I love Bounty bars they are my absolute favourite chocolate bar. I have been wanting to do something chocolatey and coconut based for a while now.

These was going to be cupcakes, but I decided I wanted to do something slightly different as I always do cupcakes.

You certainly could do this recipe as a plain coconut traybake and not add the cocoa powder to it, but I just think coconut goes best with chocolate.

If you are not a coconut fan, then you can just use this recipe to make a chocolate traybake.

I took this traybake into the office as I thought I would treat the staff who have been working in the office during lockdown.

Ingredients

Cupcakes

  • 275 g self-raising flour
  • 4 tbsp Cocoa Powder
  • 225 g caster sugar
  • 225 g butter
  • 50 g shredded coconut
  • 4 eggs
  • 1 tbsp milk
  • 4 tbsp hot water
  • 2 tsp baking powder

Icing

  • 200 g butter
  • 400 g icing sugar
  • 4 tbsp Cocoa Powder
  • 2 tbsp milk
  • 50 g shredded coconut
  • 3 bounty bars
