Me and my sister-in-law have birthdays next door to each other. I wanted to do something nice for my sister-in-law for her birthday because she has been working so hard schooling the kiddies while in quarantine.
I have been wanting to do cocktail cupcakes for a long time but did not quite know how to go about it. I am a big cocktail good and you cannot beat a good cosmopolitan.
There is vodka in these cupcakes so obviously no kid friendly but if you wanted to make some child friendly ones then just remove the vodka.
I took these cupcakes to a little gathering my brother put on for my sister-in-law to celebrate her birthday and they went down well with the six of us that were there.
I did add some red food colouring to the cupcakes to get that cosmopolitan feel of the cupcakes. The cranberry juice did add a little bit of colour to the cupcakes, but I wanted to get that red colour you see when your cosmopolitan is brought to you.
I decided to keep the buttercream its natural colour as you can see the lime and orange zest mixed into it. I did think about adding some food colouring to the butter cream so you got the full cosmopolitan feeling when you saw them but once I got to a point where I could add food colouring, I loved being able to see the different zests in the buttercream.
I defiantly felt like I was drinking a cosmopolitan when I had one of these cupcakes especially while the weather is decent here in the UK. You could add some little pipettes to the top of each cupcake filled with some more vodka and cranberry juice if you wanted a bit more alcohol.

- 125 g self-raising flour
- 125 g butter
- 125 g caster sugar
- 2 eggs
- 1¾ tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- ¾ cup cranberry juice
- ¼ cup vodka
- ½ tsp lime zest
- ½ tsp orange zest
- 1 tbsp milk
Buttercream Icing
- 250 g butter
- 500 g icing sugar
- ½ tsp lime zest
- ½ tsp orange zest
- 2 tbsp cranberry juice
- 2 tbsp vodka
- 2 tsp lime juice
