Vanilla Cupcakes

It is a nice sunny day, so I thought I would make some cute little cupcakes. Can’t resist a good cupcake, I love icing on cakes it is the best bit of a cake. This recipe makes 12 cupcakes, make sure you have proper cupcake cases as I didn’t, so I had some mixture left over. I apologise for there not being a photo of the mixture in the cases before cooked but I’m still learning to take photos when I bake so sometimes I forget. Cupcakes are a family favourite in my house apart from with my brother as he is not a massive cake fan unless its my grandma’s cakes even though she does not do anything different from me. I’ll admit her cakes are damn good.

Instructions
  1. Pre-heat the over to 180 degrees/Fan 160 degrees/Gas 4. Put muffin cases into a 12-hole muffin tin, to keep a good shape as they bake.
  2. Measure all the cupcake ingredients into a large bowl and beat until blended and smooth. Spoon evenly between the paper cases.
  3. Bake in the pre-heated oven for about 20-25 minutes until risen and golden brown. Lift paper cases out of the tin and cool cakes on a wire rack until completely cold before icing.
Butter Icing Method
  1. To make the butter icing, beat together all the ingredients to give a creamy thick icing, then smooth over the cold cakes and decorate with sprinkles.
