WARNING THESE CUPCAKES CONTAIN ALCOHOL! It is almost St Patricks Day which only means lots of booze and partying. I have never put alcohol in cupcakes, but I have this little book that is full of recipes that use alcohol.
I have been thinking a lot about what kind of cupcakes I wanted to do for St Paddy’s day and I thought doing my favourite drink in cupcakes but then I thought I should go more traditional.
Traditional for me means Guinness and I will admit I didn’t think that Guinness would work in just plain cupcakes so decided that a chocolate cupcake would be better.
These cupcakes were good, not a strong taste of Guinness and the chocolate really compliments them. I really enjoyed these cupcakes and I liked doing something different.
Guinness Cupcakes
Ingredients
Cupcakes
- 200 g self-raising flour
- ½ tsp baking soda
- 2 eggs
- 50 g Cocoa Powder
- 50 g milk chocolate
- 150 g butter
- 150 g caster sugar
- ½ can Guinness
Buttercream
- 150 g butter
- 300 g icing sugar
- ½ can Guinness
Instructions
Cupcakes
- Pre-heat oven on Gas mark 4. Put paper cases into a 12 hole muffin tin.
- Beat the butter and sugar together until combined then add the eggs and flour until fully incorporated.
- Melt the chocolate in a ban-marie over a pan then add to the mixture along with the cocoa powder and mix until incorporated. Then add the Guinness and mix again until combined
- Using an ice cream scoop, scoop the mixture into the cases. Then bake in the oven until golden brown or when a skewer comes out clean.
Buttercream
- Mix the butter until pale and fluffy then gradually add the icing sugar until incorporated.
- Add the Guinness a tablespoon at a time until you have the right consistency.
