I love shortbread biscuits, I make them as gifts every Christmas for friend and family. I have been looking a lot lately at what I bake and how I would like to bake more different things however when I bake in the week, I need something that is quick as I’m always doing it in the evenings after work.

I decided to make these while drinking a cup of tea because I kind of fancied a biscuit with my tea but didn’t have any so thought well then let’s make some. Homemade biscuits are always a nice quick recipe so fit in well with my working week.

I used both fresh orange juice and some orange extract in these biscuits to get a nice strong orange flavour. These biscuits are so simple to make but are defiantly worth it as they are so tasty.

You could use any citrus fruit like lemons, grapefruit or limes in these biscuits as it is only really the zest you need but you can use the juice of the fruit as well. These were lovely with my cup of tea but don’t get me wrong  a nice chocolate biscuits always go well with tea.

Orange Shortbread Biscuits

Ingredients

  • 100 g butter
  • 55 g golden caster sugar
  • 180 g self-raising flour
  • 1 orange zest
  • ½ tsp orange extract
  • ½ tsp orange juice

Instructions

  • Preheat the oven to 180 C / Gas mark 4. Lightly butter a baking tray.
  • Cream margarine and sugar together until light and fluffy; stir in flour and zest until you have a dough. Then roll out the dough on a floured side until its about 2 inch thick.
  • Cut the shortbread using a cutter or just cut into fingers then place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.
  • Then bake in the preheated oven until golden brown, once cooked, take out the oven and transfer the shortbread to a cooling rack.

Notes

*This will depend on the size of your cutter or how big you cut it up.
