For this recipe I will be using a Cookie Press for this recipe. I got the cookie press a few years ago but have only used it once mainly as the first time I used it, it went really badly.
The Cookie press I own comes with about 16 different disks which all produce different shapes and designs of biscuits.
I’m attempting it again for a second time and I’m using the recipe that has been proved with the cookies. I sprinkled some granulated sugar on the cookies before I put them in the oven.
The first attempt with the cookie press did not go very well as I think despite following the ingredients the dough was to wet so I added about an extra 10 grams of flour to the mixture which helped.
Second attempt went well and I had no issues. Using the cookie press is pretty easy, just fill the cookie press chamber about half full then realise the pin until it hits the dough.
Then turn the cookie press on the baking tray and click the handle twice then pull up quickly but steadily.
Vanilla Biscuits
Ingredients
- 350 g Softened Butter
- 200 g caster sugar
- 1 egg medium
- ½ tsp vanilla extract
- 450 g flour
Instructions
- Pre-heat oven to 190 degree/gas 5.Beat butter in large mixing bowl, using electric mixer until creamy.
- Add caster sugar, egg and vanilla extract, beat well. Gradually add flour, mix well to make soft dough.
- Fill cookie press, fitted with disk of your choice, with dough. Press dough onto baking stone about 2.5cm/1 inch apart. Sprinkle cookies with golden-granulated sugar, if desired.
- Bake 10-12 minutes or until lightly browned. Cool on baking stone on 2-3 minutes. Remove and place on cooling rack; cool completely.
